Cucumber mint raita Recipe

This is an Indian side dish that is used to “smother” the flames of a spicy curry or other main dish. Use it also as a salad dressing. I often throw in a peeled banana to make an unusual dessert!

Ingredients :

    • 1 baby cucumber, peeled, cored and diced
    • 1 teaspoon salt
    • 1 semi-ripe tomato, diced
    • 1 onion, finely chopped
    • 3/4 cup (180 ml) plain yoghurt
    • 1 green finger-length chilli, deseeded and finely chopped
    • 20 g (1/2 cup) mint leaves, chopped

Method :

Sprinkle the cucumber with the salt and mix well. Allow to stand for 30 minutes, then drain and squeeze the liquid from the cucumber. Add all the other ingredients and mix well.

Note : For a creamier version, substitute the same amount of coconut cream for the yoghurt.
