Meat curry powder Recipe

Normally curry powders are freshly made by cooks who have the time to measure out each spice and dry roast it before grinding them all into a paste or powder. It may be convenient to use a commercial blend like “Baba” curry powders, but it is more satisfying to make your own and vary the ingredients as needed.

Ingredients :

    • 3 tablespoons coriander seeds
    • 4 teaspoons cumin seeds
    • 1/2 tablespoon fennel seeds
    • 4 dried red finger-length chillies, stems discarded, broken into pieces
    • 1 teaspoon fenugreek seeds
    • 1/2 teaspoon mustard seeds
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground nutmeg
    • 1 teaspoon ground cloves

Method :

In a skillet, dry-roast each of the whole spices separately over gentle heat until fragrant, 2 – 3 minutes each. Let them cool and then grind all the spices to a fine powder in a mortar or spice grinder. Store in a sealed jar refrigerated or frozen.
