Pandanus lemonade Recipe

Pandanus lemonade Recipe

Citrusy lemonade dressed up for the tropics with the grassy perfume of fresh pandanus – if you are adventurous, add a few slices of nose tingling ginger to the syrup. Serve this chilled on a hot summer evening. Pandanus and ginger lift the lemonade giving it a suggestion of a bite.

Ingredients :

    • 1 cup (250 ml) fresh lemon juice
    • 1 cup (250 ml) fresh lime juice
    • 8 cups (2 litres) iced water
    • Crushed ice
    • Grated lime rind, to garnish
    • Sprigs of mint leaves, to garnish


    • 2 pandanus leaves, tied into a knot
    • 200 g (1 cup) sugar
    • 1/2 cup (125 ml) water

Method :

    1. Prepare the Pandanus Sugar Syrup by bringing the ingredients to a boil in a saucepan and stirring until the sugar is dissolved. Remove from the heat and cool.
    2. Combine the cooled Pandanus Sugar Syrup with the lemon juice, lime juice and iced water in a pitcher and stir well, then chill in the refrigerator until ready to serve.
    3. To serve, pour into individual serving glasses filled with crushed ice, top with grated lime rind and garnish with mint leaves.

Note : A tablespoon of vodka or gin may be added to create a light cocktail.

MAKES : 6–8 glasses
