Sambal Fish with Bilimbi Recipe

Sambal Fish with Bilimbi Recipe

Ingredients :

    • Spanish mackerel (ikan tenggiri) – 450 g
    • Salt – 2 tsp
    • Bilimbi (belimbing asam) – 8
    • Cooking oil – 3 Tbsp
    • Red chillies – 2, seeded and sliced slantwise
    • Lemon grass (serai) – 1 stalk, crushed
    • Coconut milk 250 ml, from – 1/2 grated coconut and suffi cient water
    • Sugar – 1 tsp
    • Salt – 1/2 tsp

Paste

    • Red chillies – 6, cut and seeded
    • Dried chillies – 10, soaked to soften and cut
    • Shallots – 10, peeled and cut
    • Candlenuts (buah keras) – 3
    • Dried shrimp paste (belacan) – 21/2 x 11/2-cm piece

Method :

    1. Season fi sh with 1 tsp salt for 10 minutes. Set aside.
    2. Rub bilimbi with remaining salt and set aside.
    3. Combine paste ingredients and blend (process) until fi ne.
    4. Heat oil in a wok and fry paste, red sliced chillies and lemon grass until fragrant and oil separates.
    5. Pour in coconut milk, bilimbi, sugar and salt and bring to a slow boil. Put in fi sh and simmer for 5 minutes until cooked. Serve hot.

Note :

If bilimbi is not available, use 1 Tbsp lemon juice as substitute.
