Spiced mangoes in yoghurt and honey Recipe

The heady “honey and peaches” aroma of ripe mangoes blend naturally with a smooth natural yoghurt base. This dessert is enticingly garnished with drizzled honey and the subtle aromas of sprinkled golden saffron threads. A hint of cardamom ties the dish together as it strengthens the yoghurt.

Ingredients :

    • 1 cup (250 ml) thick plain yoghurt
    • 2 cardamom pods, skins removed and seeds ground to a powder, or 1 teaspoon ground cardamom
    • 2 tablespoons honey
    • 1 tablespoon golden syrup
    • 2 ripe mangoes, peeled, pitted and thinly sliced into sheaths
    • Warm honey, to serve
    • Few strands of saffron, soaked in 1 teaspoon yoghurt, to garnish

Method :

    1. In a mixing bowl, combine the yoghurt, ground cardamom, honey and golden syrup and whip until well blended.|
    2. To serve, spoon the whipped yoghurt mixture into serving bowls and lay 2 mango sheaths on top, then drizzle with some warm honey over them and garnish with the saffron strands.
