Sweet blue ginger duck with star anise Recipe

This is one of my favourite aromatic recipes for duck. It is heady with the aromas of star anise, cinnamon and the clean fresh fragrance of galangal that not only adds fragrance, but also tenderises the meat until succulent—a recipe from my friend, Pauline Loh.

Ingredients :

    • 1 fresh duck (about 1.5 kg/ 3 lbs)
    • 2 teaspoons Chinese rice wine
    • 1 teaspoon oil
    • 5 cm (2 in) fresh galangal root (blue ginger), peeled and thinly sliced
    • 10 Asian shallots, peeled but left whole
    • 50 g (1/4 cup) crushed raw rock sugar
    • 1 stick cinnamon (about 8 cm/ 31/4 in)
    • 2 star anise pods
    • 6 cloves
    • 1 tablespoon dark soy sauce

Method :

    1. Clean the duck and rinse well. Trim off the neck, wing tips, tail and webs. Sprinkle the duck with the Chinese rice wine and rub well over the entire body including the cavity. Set aside.
    2. Heat the oil in a wok and stir-fry the galangal slices and whole shallots over medium heat until browned and fragrant, 1–2 minutes. Add the rock sugar and spices and stir until the sugar melts and begins to caramelise.
    3. Place the whole duck in the wok, increase the heat to high and brown the duck on all sides for about 2 minutes, turning the duck using 2 spatulas. Add the dark soy sauce and pour in enough water to cover the duck halfway.
    4. Cook the duck for 30–40 minutes, turning it often. The shallots will melt and thicken the sauce while the duck is cooking. Reduce the heat to low, turn the duck, then cover and simmer for 30 minutes, adding a little water if the duck starts to dry out. Cook uncovered for another 15 minutes and remove from the heat. Remove the duck from the wok and slice into bite-sized pieces, then transfer to a serving platter. Skim off the fat from the surface of the duck gravy and transfer to a serving bowl. Spoon some duck gravy over the duck pieces and serve with steamed rice and the duck gravy on the side.
