Chilled Almond Jelly with Lychees or Longans Recipe

A classic Chinese restaurant dish that is very easy to make and can be prepared well in advance. What a great way to end a Chinese dinner!

Ingredients :

  • 3 cups (750 ml) water
  • 2 tablespoons agar-agar powder
  • 1 cup (250 ml) fresh milk
  • 1/2 cup (125 g) sugar
  • 2 teaspoons almond essence
  • One (600-g/ 20-oz) can lychees or longans, with canning syrup, chilled
  • Ice cubes (optional)

Method :

  1. Pour the water into a deep saucepan and sprinkle the agar-agar powder over it. Stir gently and slowly bring to a boil over medium heat. Then reduce the heat and simmer gently over low heat for 5 minutes. Add the milk and sugar, and continue to stir until the sugar is completely dissolved. Then add the almond essence and gently simmer for another minute. Pour the mixture into a square or rectangular dish and leave to set, then refrigerate until required.
  2. Just before serving, pour the chilled lychees or longans and their canning syrup into a large bowl. Cut the almond jelly into squares and add to the bowl. Add a few ice cubes, if desired, and serve immediately.
