Kek Masam Manis Recipe

Ingredients :

    • Eggs – 5, yolks and whites separated
    • Castor (superfi ne) sugar – 150 g
    • Butter – 250 g
    • Condensed milk – 198 g (1/2 can)
    • Vanilla essence (extract) – 1 tsp
    • Cream (soda) crackers – 150 g, pounded and sifted
    • Green food colouring – 1/4 tsp
    • Haw fl akes (round) – 15 packs

Method :

    1. Whisk egg whites until stiff, then gradually add sugar a spoonful at a time, beating well after each addition.
    2. In a separate bowl, cream butter, condensed milk and vanilla essence until light and fl uffy. Add egg yolks one at a time, beating well after each addition.
    3. Add egg yolk mixture to egg white mixture. Combine lightly and evenly. Fold in pounded crackers and divide mixture into two equal portions. Colour one portion green.
    4. Line the base of a 21-cm round cake tin with greased greaseproof paper. Spread a third of green mixture evenly onto base of lined tin. Arrange three packets of haw fl akes on surface.
    5. Steam over rapid boiling water for 7 minutes. Remove from steamer and spread a third of yellow mixture over steamed layer. Arrange another three packets of haw fl akes on top and return to steamer for 7 minutes. Repeat procedure, alternating layers with remaining green and yellow mixtures and haw fl akes.
    6. Allow cake to cool in the tin for 15 minutes before turning out onto a wire rack to cool thoroughly. When cool, slice to serve.

Note : Haw fl akes are thin red fl akes the size and shape of a 20-cent coin. They are manufactured in China and are sold in most local sweet shops. They have a sweet and sour taste and are a favourite with most children.
