Bamboo Shoot Salad Recipe

There are several different types of bamboo shoot available in Taiwan, and they are all delicious, hence you will find many dishes that feature bamboo shoot in Taiwanese cooking. This is one of my favourite dishes featuring bamboo shoot, and it is the first dish that I always ask my grandmother to cook for me whenever I go back to visit Taiwan. Being a salad, it is light and helps cool the body in the summer.

Ingredients :

  • 2 kg (4 lb 6 oz) fresh bamboo shoot, with skin
  • 1 tsp salt
  • Water, as needed
  • Taiwanese-style mayonnaise, to taste

Method :

  1. Do not peel the bamboo shoot. Place it into a stockpot with the salt and add enough water to cover the bamboo shoot completely.
  2. Cover the pot and bring the water to a boil. Lower the heat and simmer for 1 hour.
  3. Turn off the heat and leave the bamboo shoot to cool in the pot. When cool, remove the bamboo shoot and refrigerate to chill.
  4. Peel the bamboo shoot and cut into 2.5-cm (1-in) pieces. Arrange on a serving plate and drizzle with Taiwanese-style mayonnaise. Garnish as desired and serve.
