Fa Gao Recipe

The Chinese name for this steamed cake, fa gao, literally means ‘raised’ cake, but it also means prosperity or promotion in Chinese, hence the Chinese believe that eating this cake will bring good fortune and the opportunity for a promotion.

Ingredients :

  • 320 g (111/4 oz) rice flour
  • 100 g (31/2 oz) plain flour
  • 15 g (1/2 oz) baking powder
  • 180 g (61/3 oz) demerara sugar
  • 50 g (13/4 oz) dark brown sugar
  • 400 ml (131/2 fl oz) water

Method :

  1. Sift the rice flour, plain flour and baking powder into a mixing bowl. Add both types of sugar and mix well. Make a well in the centre of the mixture and add the water. Mix evenly. The batter will be thick and sticky. Let sit for 20 minutes.
  2. Place 10–12 small heatproof cups/cupcake moulds in a steamer and steam over high heat for 7–8 minutes until the cups/moulds are warm.
  3. Place paper cupcake liners into the cups/moulds and fill until about four-fifths full.
  4. Steam for about 30 minutes until the cakes are risen and cooked through.

Note : Do not open the steamer while the cakes are still steaming as the loss of heat may cause the cakes to fall.

Makes 10–12 pieces
