Ginger and Sesame Oil Chicken Soup Recipe

Ginger and Sesame Oil Chicken Soup Recipe

This soup is typically enjoyed during the cold winter months as the rice wine helps to warm the body. Sometimes, this dish is also prepared using only rice wine with no added water. In Taiwan, expectant mothers do not consume this soup as it contains a lot of alcohol and dark sesame oil is also thought to cause womb contractions.

Ingredients :

  • 2 Tbsp dark sesame oil
  • 10 slices ginger (evenly sliced)
  • 6 chicken thighs, approximately 800 g (13/4 lb), cut into bite-size pieces
  • 625 ml (20 fl oz / 21/2 cups) rice wine
  • 625 ml (20 fl oz / 21/2 cups) water
  • 1 tsp salt
  • 1 tsp sugar

Method :

  1. Heat the dark sesame oil in a wok over low heat. Add the ginger and stir-fry until golden brown and crisp. Do this over low heat so as not to burn the ginger. Burnt ginger will leave a bitter taste.
  2. Add the chicken and stir-fry over high heat until the meat turns white.
  3. Transfer everything to a stockpot and add the rice wine and water. Bring to a boil, then simmer over low heat for 1 hour.
  4. Season with salt and sugar.
  5. Dish out and serve immediately.

Note: This dish can be prepared using any part of the chicken. I have used chicken thighs, but you can also use a whole chicken, cut into pieces.
