Mustard Green Chicken Soup Recipe

This soup is traditionally served during the Lunar New Year as the long stalks of mustard greens are symbolic of long life. Mustard greens are often used in soups and stir-fries in Taiwanese cooking as it is not just tasty, but also one of the most nutritious green vegetables, full of antioxidants and vitamins.

Ingredients :

  • 1 medium-size chicken, cut into pieces
  • 3 slices ginger
  • 1.5 litres (48 fl oz / 6 cups) water, or as needed
  • 800 g (13/4 lb) mustard greens
  • 1 tsp salt
  • 1/4 tsp ground white pepper

Method :

  1. Boil a large pot of water and blanch the chicken briefly. Drain and rinse the chicken with cold water. This step will clean and rid the chicken of any unpleasant smells and impurities.
  2. Place the chicken into a stockpot and add the ginger. Add the water so the ingredients are completely covered. Add more water if necessary. Bring to a boil, then lower the heat and simmer for about 11/2 hours until the chicken is cooked through and tender.
  3. Rinse the mustard greens and drain well. Cut them into short lengths.
  4. Add the mustard greens and cook for a few minutes. Season the soup with the salt and pepper.
  5. Dish out and serve.
