Steamed Halibut with Pickled Cordia Recipe

Steamed Halibut with Pickled Cordia Recipe

Steamed fish with pickled cordia is a very common dish in Taiwan and it is on the menu of practically every seafood restaurant. Be careful however when you prepare this dish at home, as the pickled cordia has a strong flavour and adding too much can spoil the taste of the dish.

Ingredients :

  • 4 slices halibut fillet, each 180–200 g (61/3–7 oz)
  • 1/2 tsp salt
  • 2 Tbsp pickled cordia with some pickling liquid
  • 1 tsp finely chopped garlic
  • 1 tsp finely sliced red chilli
  • 30 g (1 oz) spring onion, finely sliced

Seasoning

  • 1 tsp sugar
  • 1/2 tsp salt
  • A pinch of ground white pepper
  • 1 Tbsp rice wine
  • 1/4 tsp sesame oil
  • 1 Tbsp light soy sauce

Method :

  1. Rinse the fish and pat dry with paper towels. Rub the salt over the fish and set aside for 10 minutes.
  2. Mix the cordia, garlic and seasoning in a bowl and set aside for 5 minutes.
  3. Place the fish on a steaming plate and cover with the cordia and garlic seasoning. Top with the sliced chilli and spring onion.
  4. Place the fish in a steamer and steam over medium heat for about 20 minutes or until the fish is cooked through.
  5. Serve immediately.

Serves 4
