Steamed Tofu with Prawns Recipe

Tofu is a very common ingredient in Chinese and Taiwanese cooking and it is prepared in many different ways including stir-frying, pan-frying, steaming, stewing and deep-frying. In this typical home-style dish, it is steamed with prawn paste. Tofu is not just tasty, but also high in protein, vitamins, calcium and minerals and low in calories, sodium and fat.

Ingredients :

  • 500 g (1 lb 11/2 oz) firm tofu
  • Salt, as needed
  • 120 g (41/3 oz) prawns
  • 1/2 tsp finely chopped ginger


  • 1/4 tsp salt
  • 1/4 tsp rice wine
  • 1 tsp light soy sauce
  • 1/4 tsp ground white pepper


  • 150 ml (5 fl oz) stock
  • 1 Tbsp oyster sauce
  • 1 tsp sugar
  • 1 tsp potato starch or cornflour

Method :

  1. Remove the tofu from its packaging. Drain well and pat dry. Sprinkle some salt on the tofu and leave for a few minutes.
  2. Slice the tofu into 2.5-cm (1-in) slabs, then use a cookie cutter to cut the tofu into attractive shapes.
  3. Using a teaspoon, dig a small hole in the middle of each piece of tofu. Place on a steaming plate and set aside.
  4. Peel and devein the prawns. Rinse and chop roughly, then place in a food processor with the seasoning. Process into a paste. Transfer to a bowl.
  5. Roll the prawn paste into small balls and place a ball into each hollowed-out tofu piece.
  6. Place the tofu in a steamer over medium heat. Steam for 10–15 minutes until the prawn paste is cooked through. Remove from the steamer.
  7. Place the ingredients for the sauce in a small saucepan and bring to a boil, stirring occasionally until the sauce is slightly thickened.
  8. Drizzle the sauce over the tofu. Garnish as desired and serve.
