Stir-Fried Pickled Bamboo Shoot with Spicy Minced Beef Recipe

Traditionally, food was preserved by drying or pickling so that they could be stored for future consumption, and this dish features one such ingredient, pickled bamboo shoot. This is one of my favourite dishes that my grandma cooks. Whenever I visit Taiwan, I never fail to ask her to cook this dish for me and she is always happy to oblige. This dish is perfect eaten with white rice.

Ingredients :

  • 400 g (141/3 oz) minced beef
  • 2 Tbsp cooking oil
  • 15 g (1/2 oz) garlic, peeled and chopped
  • 15 g (1/2 oz) red chilli, sliced
  • 400 g (141/3 oz) pickled bamboo shoot, cut into cubes

Marinade

  • 11/2 tsp sugar
  • 2 Tbsp light soy sauce
  • 1 tsp potato starch or cornflour
  • 1/2 tsp rice wine

Seasoning

  • 1/2 tsp salt
  • 1 tsp dark soy sauce
  • 1 Tbsp light soy sauce

Method :

  1. Place the minced beef and marinade in a bowl and mix well. Set aside for at least 30 minutes.
  2. Heat the oil in a wok over high heat. Add the garlic and chilli and stir-fry until aromatic.
  3. Add the pickled bamboo shoots and stir-fry for 2 minutes.
  4. Add the minced beef and seasoning and stir-fry until the meat is cooked.
  5. Dish out and serve immediately.

Serves 4
