White Radish and Pork Rib Soup Recipe

White Radish and Pork Rib Soup Recipe

This is a very common soup prepared in Taiwanese households as it is thought that the boiled pork ribs will provide children with much-needed calcium. The white radish gives this dish a natural sweetness and is refreshing to eat.

Ingredients :

  • 320 g (111/4 oz) pork ribs, cut into short lengths
  • 1 litre (32 fl oz / 4 cups) water
  • 1 Tbsp rice wine
  • 2 slices ginger
  • 200 g (7 oz) white radish, peeled and cut into 2.5-cm (1-in) cubes
  • Salt, to taste
  • Ground white pepper, to taste

Method :

  1. Boil a pot of water and blanch the ribs briefly to remove any impurities. Drain and rinse with cold water.
  2. Place the ribs, water, rice wine and ginger into a stockpot. Bring to a boil, then simmer over low heat for 1 hour.
  3. Add the white radish and cook for about 30 minutes until the meat on the ribs are soft and tender.
  4. Season with salt and pepper to taste.
  5. Dish out. Garnish as desired and serve.

Serves 4
