Shrimp Paste Chili Sauce (Sambal Teras) Recipe

No other spicy sauce embodies Indonesia more than Shrimp Paste Chili Sauce. This condiment is not for the faint of heart nor for novices to extremely spicy foods. Shrimp Paste Chili Sauce is my all time favorite chili sauce. Thanks to lots of garlic and shrimp it’s got some amazing and strong flavors. Indonesians serve this as a condiment to many fried foods as well as a dipping sauce for raw vegetables.

MAKES 11/2 CUPS (125 G)
PREPARATION TIME : 10 MINUTES
COOKING TIME : 1 MINUTE

Ingredients :

    • 1/4 tablespoon oil
    • 1/2 tablespoon dried shrimp paste (Indonesian terasi or Thai shrimp paste)
    • 4-5 cloves garlic
    • 1/4 teaspoon salt
    • 1/2 teaspoon sugar
    • 8 bird’s-eye chili peppers, rinsed and ends trimmed

Method :

    1. Heat the oil in a small pan over high heat and sauté the dried shrimp paste for about 30 to 45 seconds, mashing thoroughly until the unmistakably pungent scent permeates the air. Set aside to cool.
    2. Grind the garlic, salt, and sugar in a mortar and pestle or food processor until smooth.Add the chili peppers and shrimp paste to the grinder and continue to grind until all the ingredients are thoroughly combined and have a smooth texture. Shrimp Paste Chili Sauce should be eaten on the same day it’s made and not kept overnight.
